3 Quick and Easy Meals Using Ground Beef For Busy Weeknights
Does it ever seem impossible to keep up with chasing after your kids AND get real food on the table?
I'm feeling it hard these last few weeks. ZERO inspiration in the kitchen.
All 4 boys did wrestling this year so we're literally running to town at least 4 extra times per week PLUS tournaments on the weekend.
So if I don’t prep and plan supper I just end up cooking eggs and my friend, I’m to a point where I’d rather starve then eat another over easy egg right now.
Since allowing our kids to do sports is a choice we’ve made I decided I needed to better plan or we’ll keep eating eggs.
So I wrote down a huge list of my favorite easy and quick meals.
Most often these recpies used ground beef.
I know I'm not the only "stretched too thin" mom out there who struggles with mealtime.
That's why I'm sharing my favorite ground beef recipes that I have planned for the next week.
These recipes are easy and quick and will help make your meals a little less stressful.
I always double my meals so I only have to cook 3-4 nights a week.
And if we don’t eat up all the leftovers I freeze them.
Ingredients:
2 lbs grass-fed ground beef
3 pastured eggs
1 1/2 cups oatmeal
1 tsp garlic
3T minced onion
1 1/2 cups organic ketchup
3/4 pure maple syrup
3 Tbsp apple cider vinegar
Instructions
Mix the ground beef, oatmeal, garlic, onion, and eggs and form into 1 1/2” balls.
Combine ketchup, syrup and apple cider vinegar in a bowl an pour sauce over meatballs
Place in a shallow baking pan.
Bake at 375 degrees for 20 minutes.
Ingredients:
1 lb ground beef
1 T soy sauce
1 tsp rice wine vinegar
1 tsp seasame oil
1/2 minced ginger
1/2 tsp garlic powder
1 c shredded cabbage/carrot mix
2 eggs
Optional: mayo & hot sauce for topping
Instructions:
Brown ground beef in a large skillet over medium-high heat.
Once cooked through add spices and mix. Add in 2 eggs and cook through.
Add in seasame oil, soy sauce, vinegar
Add the cabbage and carrots tand cook for 2-3 minutes, until softened slightly.
Add the green onions to the pan and cook for an additional minute.
Serve immediately, topped with mayo and hot sauce if desired.
Ingredients:
2 lbs. grass-fed ground beef
1/2 tsp salt
1/4 tsp pepper,
1/2 tsp garlic powder
6–12 slices American cheese
Brioche buns
Desired Toppings: lettuce, tomato, bacon, onion, avocado, etc.
Instructions:
Mix the spices into the ground beef.
Divide the beef into 6 even sections. Form each section into two thin patties (a smaller top patty, and a larger bottom patty).
Place 1-2 folded pieces of cheese on the bottom patty, and place the smaller top patty over it, pinching up the edges to seal.
Grill or pan fry for about 5 minutes on medium heat, or until cooked to your desired doneness and cheese is melted.
Serve on buns with your favorite toppings!
