The Perfect Pork Roast
Ingredients:
3-4 pounds of Wholesome Family Pork roast
3 cloves of garlic, minced
2 sprigs of fresh rosemary
2 sprigs of fresh thyme
1 lemon, zested and juiced
2 tablespoons of olive oil
Salt and pepper, to taste
1 cup of chicken or vegetable broth
1/2 cup of dry white wine (optional)
Instructions:
Preheating your oven to 350°F .
Place the pork roast on a clean cutting board and pat it dry with paper towels.
In a small bowl, combine the minced garlic, lemon zest, rosemary, thyme, olive oil, salt, and pepper.
Rub this mixture generously all over the pork roast. Make sure to get into all the nooks and crannies.
This is my SECRET do NOT skip this step—Heat a heavy oven-safe skillet or Dutch oven over medium-high heat. Sear the roast on all sides.
Remove the seared pork roast from the skillet and set it aside.
Pour in the chicken or vegetable broth and white wine (if using) into the skillet, scraping up any flavorful bits from the bottom. Return the pork roast to the skillet and drizzle with the lemon juice. Place the fresh rosemary and thyme sprigs on top.
Cover the skillet or Dutch oven with a lid or foil and transfer it to the preheated oven. Roast the pork for approximately 1.5 to 2 hours, or until the internal temperature reaches 145°F.
For a crispier crust, you can remove the lid or foil during the last 20 minutes of roasting.
Once done, remove the skillet from the oven and let the pork roast rest for about 10 minutes before slicing.
Slice the pork roast into thin, succulent pieces, and serve with the pan juices for added flavor.
